With plenty of weight and thickness the Kingyu AUS8 allows you to chop with ease. Hard enough to get the job done while still retaining it's edge, and soft enough to withstand the impact reducing risk of chipping. The single bevel allows for an excellent edge and if you're looking for pure chopping power to compliment your Japanese knives then look no further.
There are cheaper cleavers available but quite often they're a bit softer and will require more regular sharpening during use but we expect the Kingyu AUS8 will retain a better edge than many of the cheaper varieties available out there.
